Yeah, I understand the psychology behind that pretty well. I used to finish all of the books I started and watch series until the bitter end (The X-Files, I'm looking at you...) but I don't any longer. I get impatient and can't make myself do it. Maybe it's because I'm too old? Life feels too precious and too short to watch bad T.V., especially now that there is enough good T.V. that I'll never find the time and energy to watch it all. And books. I'll never get around to reading everything I want to.
Plus, the way network television works, there is no guarantee of closure even if I do keep watching through the series finale and beyond (again, look at The X-Files).
I am getting better at dropping shows in the beginning of their run for that reason, it's just once I've invested a certain number of years in the characters that it became a problem for me :P
