That's the point of that whole ep IMO. Rube's been telling them to live on the periphery for all these years, what he's saying is that it's impossible not to touch, not to feel, even though you're undead, you're still human and experience human desires and emotions.
But at the same time, you can't let said emotions get out of hand, because look what happens. MURDER! MAYHEM!
I don't necessarily think that ALL gravelings come about in this way, but it's mostly for thematic use. What I mean is, gravelings are probably born out of bad things, not necessarily in that way, but I suppose gravelings were once people too but have to spend the rest of their unlife in their horrible graveling form.
Ray's "graveling" just IMO represents what happens when you repress things, it comes back to bite you in this ass. George is able to "kill" said graveling because of her willingness to face her (their) fears.
Also in the commentary, or the featurette on gravelings, there's just a section on the Ray graveling, and how it differed from the rest.
